洋葱多酚的提取工艺研究进展

Advances in extraction technology of onion polyphenols

摘要

洋葱是人们生活中常见并且营养价值丰富的蔬果,尤其含有不少多酚类物质。多酚类则是一种对多种疾病存在预防及降低风险的作用,值得研究其提取工艺以供果蔬精细加工生产使用。本文论述了洋葱及多酚类物质的基本情况;有关各种果蔬中多酚类提取的工艺研究进展;对洋葱提取多酚类物质的工艺研究进展。

Abstract

Onion is a kind of common vegetable and fruit with rich nutritional value in our life, especially contains a lot of polyphenols. Polyphenol is a kind of disease prevention and risk reduction role, it is worth studying the extraction process for fruit processing production. The basic situation of onion and polyphenols is discussed in this paper. The research progress of extraction technology of polyphenols from various fruits and vegetables; The research progress on extraction of polyphenols from onion.
