Tea is a popular beverage worldwide. Commercial green tea contains polyphenols, which include flavanols, flavandiols,flavonols, and phenolic acids; these compounds account for
up to 30% of the dry weight. Polyphenols are also known as catechins, mainly including (-)-epigallo-catechin-3-gallate (EGCG), (-)-epigallocatechin (EGC), (-)-epicatechin gallate (ECG) and (-)-epicatechin (EC).
